Grilled Bison Burgers
Do this first
- Heat the grill to medium-high, about 400°F.
Then prep
- If you're using butter instead of olive oil, melt the 1 tbsp butter.
- In a bowl, gently mix the 1 lb bison with the 1 tsp salt, 1/2 tsp pepper and 1/2 tsp garlic powder.
- Add the 1 tbsp olive oil or melted butter. Mix gently. Bison is very lean and needs the fat.
- Divide into 4 portions. Shape each into a patty about 3/4 inch thick.
- Press a small dent into the center of each patty so it does not puff up.
- Set the patties on a plate. Set out a spatula, an instant-read thermometer, a clean plate for the cooked burgers and the 4 buns.
- Everything is ready. Wash your hands and the bowl.
Ingredients
- 1 lbground bison
- 1 tspsalt
- 1/2 tspblack pepper
- 1/2 tspgarlic powder
- 1 tbspolive oil or melted butter
- 4hamburger buns
Steps
- Put the patties on the grill. Do not press down on them.
- Grill 3-4 minutes (4-5 minutes for medium). Set a timer. Nothing to do until the timer goes.
- When the timer goes, flip the patties.
- Grill 3-4 minutes more (4-5 minutes for medium). Set a timer.
- When the timer goes, check the center with the thermometer: 130-135°F for medium-rare, 135-145°F for medium. When it's there, go to the next step.
- Move the burgers to the clean plate. Rest 2-3 minutes.
- While they rest: toast the 4 buns.
- Put each burger on a toasted bun. Serve.
Notes
Bison overcooks fast. Past 155°F it turns dry and tough.
